Ingredients

2 medium zucchini

15 ml extra-virgin olive oil

2 g fine sea salt

1 g freshly ground black pepper

2 g garlic powder

2 g dried Italian herbs

1 medium ripe tomato, thinly sliced

40 g mozzarella cheese, shredded

Instructions

  • Preheat the Oven or Grill: Preheat your oven to 400°F (200°C) for roasting, or prepare the grill for medium heat.

  • Prepare the Zucchini: Wash the zucchini thoroughly and slice it into rounds about ½-inch thick.

  • Season the Zucchini: In a small bowl, mix the extra-virgin olive oil, sea salt, black pepper, garlic powder, and dried Italian herbs. Brush each zucchini slice generously with the seasoning mixture.

  • Roast or Grill the Zucchini:

    • For Roasting: Arrange the zucchini slices on a parchment-lined baking sheet and roast in the preheated oven for 12-15 minutes, or until tender and slightly golden.

    • For Grilling: Grill the zucchini slices for 3-4 minutes on each side, until tender and grill-marked.

  • Top with Tomato and Cheese: Once the zucchini is cooked, top each slice with a thin slice of ripe tomato, and sprinkle with shredded mozzarella cheese.

  • Melt the Cheese:

    • For Roasting: Return the zucchini to the oven for an additional 3-4 minutes, or until the cheese is melted and bubbly.

    • For Grilling: Close the grill lid for 1-2 minutes to melt the cheese.

  • Serve: Remove the zucchini from the oven or grill and serve immediately.
