Breakfast Grilled Cheese & Eggs

A delicious, hearty breakfast sandwich combining scrambled eggs, savory sausage, gooey cheese, and crispy sourdough bread, perfect for starting your day.

Ingredients

1/2 pound ground breakfast sausage

6 large eggs, beaten

8 slices Colby-Jack cheese

4 tablespoons unsalted butter, softened

8 slices sourdough bread

Instructions

  1. Cook the sausage: In a large skillet, cook the ground breakfast sausage over medium heat, breaking it apart as it cooks. Cook for 5-7 minutes or until fully browned and cooked through. Remove from heat and set aside.
  2. Scramble the eggs: In the same skillet, add the beaten eggs. Cook over medium-low heat, stirring frequently until the eggs are soft and fluffy, about 3-5 minutes. Remove from heat and set aside.
  3. Assemble the sandwiches: Lay out 4 slices of sourdough bread. Top each slice with a slice of Colby-Jack cheese, followed by a spoonful of cooked sausage, then scrambled eggs. Top with another slice of cheese and another piece of bread.
  4. Grill the sandwiches: Heat a skillet or griddle over medium heat. Spread a thin layer of butter on the outside of each sandwich. Grill the sandwiches for 3-4 minutes per side until golden brown and the cheese is melted.
  5. Serve and enjoy: Remove from the skillet, slice in half, and serve immediately.

Notes

To make ahead, cook the sausage and scramble the eggs the night before, then assemble the sandwiches when ready to grill.

For a lighter version, swap the butter for olive oil and use a whole grain bread.

Customize with your favorite condiments or hot sauce for added flavor.

If you prefer a crispy sandwich, use more butter or a grill press for extra crunch.
