Ingredients

Oatmeal Base

  • 2 very ripe bananas (1 cup mashed)
  • 1 ½ cup unsweetened almond milk, or milk of choice
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 cups rolled oats (gluten-free if needed)
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup blackberries, fresh or frozen

Streusel Topping (optional)

  • 2 tablespoons coconut oil, melted
  • ¼ cup rolled oats (gluten-free if needed)
  • 2 tablespoons coconut sugar
  • 2 tablespoons all purpose flour (gluten-free if needed)
  • ¼ teaspoon ground cinnamon

For Serving (optional)

  • Vanilla yoghurt, or yoghurt of choice
  • Blackberries, fresh or frozen
  • Maple syrup to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the oatmeal.
  2. Mix Wet Ingredients: In a large bowl, mash the ripe bananas thoroughly. Add the almond milk, maple syrup, and vanilla extract, stirring until the mixture is smooth and combined.
  3. Combine Dry Ingredients: In another bowl, mix together the rolled oats, chia seeds, baking powder, cinnamon, and salt to ensure even distribution of all dry ingredients.
  4. Combine Wet and Dry Mixtures: Pour the dry ingredients into the wet banana mixture, stirring to blend everything evenly without over-mixing.
  5. Add Blackberries: Gently fold in the blackberries, being careful not to break them up too much to prevent too much juice release.
  6. Prepare Streusel Topping (optional): In a small bowl, mix together the melted coconut oil, rolled oats, coconut sugar, flour, and ground cinnamon until crumbly. Set aside.
