- 1/2 cup (1 stick) unsalted butter, room temperature
- 3/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup maraschino cherries, well-drained and finely chopped
- 1/2 cup semi-sweet chocolate chips (plus extra for topping)
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter and brown sugar until smooth. Add egg and vanilla, mixing until combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to wet ingredients.
- Fold in chopped cherries and chocolate chips until evenly distributed.
- Scoop dough onto prepared baking sheet. Press extra cherries and chocolate chips on top for decoration.
- Bake for 13–15 minutes, until set but still soft in the center. Do not overbake.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- No chilling required these cookies are ready to bake right away.
- Drain cherries well to avoid excess moisture in the dough.
- Pressing extra toppings onto the dough before baking gives a bakery-style look.
- Freeze baked cookies for up to 3 months; thaw in the refrigerator.
