This BBQ Macaroni Salad combines smoky kielbasa sausage, tangy BBQ sauce, and spicy seasonings for a unique twist on the classic macaroni salad. Perfect for summer picnics, barbecues, and potlucks, this hearty dish is quick, flavorful, and satisfying!
1 pound elbow macaroni
1 red bell pepper, diced
3–4 green onions, diced
12–13 ounces kielbasa sausage, cut into bite-sized chunks
¾ cup mayo
¾ cup BBQ sauce
1 tablespoon apple cider vinegar
½ teaspoon salt
¼ teaspoon black pepper
⅛ teaspoon cayenne pepper
½ teaspoon chili powder
Cook the macaroni: Boil salted water, cook macaroni according to package directions until al dente. Drain and rinse under cold water.
Cook the kielbasa: Sauté kielbasa in a skillet for 5-7 minutes until browned and crispy. Set aside to cool.
Prepare the dressing: Whisk together mayo, BBQ sauce, apple cider vinegar, salt, pepper, cayenne pepper, and chili powder until smooth.
Assemble the salad: In a large bowl, combine cooked macaroni, diced bell pepper, green onions, and kielbasa. Pour dressing over and stir to coat.
Chill & Serve: Refrigerate for at least 30 minutes before serving.
For a creamier salad, add more mayo.
Substitute kielbasa with smoked sausage or a vegetarian alternative.
Adjust spice level with extra cayenne or jalapeños.
