These Healthy Banana Oatmeal Cookies are a delicious and nutritious treat, naturally sweetened with ripe bananas and honey. Packed with rolled oats, cinnamon, and optional mix-ins like chocolate chips or nuts, these cookies are soft, chewy, and perfect for a healthier snack or breakfast. Ingredients

2 ripe bananas, mashed

3 tablespoons honey

1 large egg

1 teaspoon vanilla extract

1 ½ cups rolled oats

1 teaspoon cinnamon

¼ teaspoon sea salt

Optional mix-ins: chocolate chips, chopped nuts, dried fruit (raisins or cranberries), or seeds

Instructions

  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Set aside.

  • In a large mixing bowl, mash the ripe bananas until smooth.

  • Add the honey, egg, and vanilla extract to the mashed bananas and stir until well combined.

  • Add the oats, cinnamon, and sea salt, mixing until the mixture is fully combined.

  • If desired, fold in any mix-ins, such as chocolate chips, dried fruit, or nuts.

  • Use a 1 tablespoon measuring spoon or a 1 ½ tablespoon cookie scoop to portion the dough onto the prepared baking sheets. Space the dough about 2 inches apart.

  • Bake for 12-15 minutes, or until the tops of the cookies are just set and the bottoms are lightly browned.

  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire cooling rack to cool completely.

  • Serve the cookies slightly warm or at room temperature.

Notes

Sweetness Adjustments: If you prefer sweeter cookies, you can add more honey or maple syrup.

Texture Adjustments: For a firmer dough, add a bit more oats. For softer cookies, reduce the oats slightly.
