These Healthy Banana Oatmeal Cookies are a delicious and nutritious treat, naturally sweetened with ripe bananas and honey. 2 ripe bananas, mashed
3 tablespoons honey
1 large egg
1 teaspoon vanilla extract
1 ½ cups rolled oats
1 teaspoon cinnamon
¼ teaspoon sea salt
Optional mix-ins: chocolate chips, chopped nuts, dried fruit (raisins or cranberries), or seeds
Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Set aside.
In a large mixing bowl, mash the ripe bananas until smooth.
Add the honey, egg, and vanilla extract to the mashed bananas and stir until well combined.
Add the oats, cinnamon, and sea salt, mixing until the mixture is fully combined.
If desired, fold in any mix-ins, such as chocolate chips, dried fruit, or nuts.
Use a 1 tablespoon measuring spoon or a 1 ½ tablespoon cookie scoop to portion the dough onto the prepared baking sheets. Space the dough about 2 inches apart.
Bake for 12-15 minutes, or until the tops of the cookies are just set and the bottoms are lightly browned.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire cooling rack to cool completely.
Serve the cookies slightly warm or at room temperature.
