These Balsamic Chicken Lettuce Wraps are a healthy, low-carb meal, combining tangy grilled chicken, sweet strawberries, and crunchy pecans. Wrapped in crisp lettuce and topped with feta and a balsamic glaze, this easy-to-make dish is perfect for lunch or dinner.

Ingredients

For the Grilled Balsamic Chicken:

2 pounds boneless, skinless chicken breasts

1/2 cup balsamic vinegar

1/2 cup orange juice

1/2 cup olive oil

4 tablespoons honey

1 tablespoon dried basil

Salt and pepper to taste

For the Balsamic Glaze:

1/2 cup balsamic vinegar

For the Lettuce Wrap:

812 whole lettuce leaves (Butter, Iceberg, or Romaine)

1 pint strawberries, sliced

1/2 cup pecans

1/2 cup feta cheese

Instructions

  • Prepare the Marinade: In a bowl, whisk together balsamic vinegar, orange juice, olive oil, honey, dried basil, salt, and pepper. Marinate chicken for at least 1 hour (or overnight for maximum flavor).
  • Grill the Chicken: Preheat the grill to medium-high. Grill the chicken for 6-7 minutes per side until it reaches 165°F (74°C). Let it rest before slicing into thin strips.
  • Make the Balsamic Glaze: Simmer 1/2 cup balsamic vinegar in a saucepan for 5-7 minutes until thickened. Set aside.
  • Assemble the Wraps: Layer lettuce leaves with grilled chicken, strawberries, pecans, and feta cheese. Drizzle with balsamic glaze and serve immediately.

Notes

Store leftover chicken and glaze separately in the fridge for up to 3 days. Assemble wraps fresh to avoid wilted lettuce.
