Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin or line it with cupcake liners for easy removal.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, cinnamon, baking powder, sea salt, and ground flaxseed. Stir well to evenly distribute all dry ingredients.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, unsweetened applesauce, maple syrup, almond butter, and vanilla extract until smooth and well combined.
  4. Combine Wet & Dry: Pour the wet mixture into the dry ingredients and stir until fully incorporated. Fold in half of the diced apples to ensure they are evenly distributed throughout the batter.
  5. Fill Muffin Tin: Spoon the oatmeal batter evenly into the prepared muffin tin, filling each cup nearly to the top. Sprinkle the remaining diced apples on top of each cup as a garnish.
  6. Bake: Bake in the preheated oven for about 25-30 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
