Air Fryer Veggie Chips are a healthy, crunchy alternative to traditional chips made with fresh vegetables like beets, carrots, and sweet potatoes. Lightly seasoned and air fried, they are quick, easy, and customizable to your flavor preferences.

Ingredients

3 of any of the following, approximately 3 cups sliced veggies or 400 grams: Large Beet, Red or Golden, rinsed and peeled; Large Carrot, Any color, rinsed; Sweet Potato, Any color, rinsed

1 teaspoon cornstarch, optional (3 grams)

2 teaspoons olive oil, 8 grams

½ teaspoon salt, 2 grams

¼ teaspoon black pepper, optional (0.5 grams)

1 teaspoon smoked paprika, optional (1.5 grams)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice your vegetables (beets, carrots, or sweet potatoes) into thin, even rounds, using a mandoline slicer or sharp knife for uniform thickness. The thinner the slices, the crispier the chips.
  3. If you’re using cornstarch, sprinkle it over the vegetable slices and toss them to coat. This step helps create a crispier texture, but it’s optional.
  4. Drizzle the vegetable slices with olive oil, then toss to coat evenly.
  5. Add salt, black pepper (if using), and smoked paprika (if using), and toss again to distribute the seasoning.
  6. Arrange the seasoned vegetable slices in a single layer in the air fryer basket. Don’t overcrowd the basket; you may need to cook in batches depending on the size of your air fryer.
  7. Air fry for 10-15 minutes, shaking the basket halfway through for even crispiness. Check the chips after 10 minutes and continue cooking if you want them to be extra crispy.
  8. Once done, remove the chips from the air fryer and let them cool slightly before serving.

Notes

For extra crispiness, slice the vegetables very thin and avoid overcrowding the air fryer basket.

Experiment with other vegetables like zucchini, parsnips, or butternut squash for variety.

If you don’t have a mandoline slicer, make sure to slice the vegetables as evenly as possible with a sharp knife to ensure they cook evenly.

For a spicier version, add cayenne pepper or red pepper flakes to the seasoning mix.
