Accordion Potatoes are a visually stunning and flavorful side dish that features crispy, seasoned layers with a soft, tender interior. Infused with garlic, butter, and Italian seasoning, they make for a perfect addition to any meal.

Ingredients

4 large potatoes

¼ cup unsalted butter, melted

4 cloves garlic, minced

2 tbsp parsley, chopped

1 tsp Italian seasoning

¼ tsp ground black pepper

½ tsp paprika

Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Wash and scrub the potatoes, then dry them thoroughly. Slice each potato into thin slices, about ¼ inch thick, being careful not to cut all the way through. Use chopsticks or wooden spoons on either side of the potato as a guide.
  3. In a small bowl, combine the melted butter, minced garlic, parsley, Italian seasoning, black pepper, paprika, and salt. Stir until well mixed.
  4. Brush the garlic butter mixture generously over the sliced potatoes, making sure it gets into the crevices between the slices.
  5. Place the potatoes on the prepared baking sheet and bake for 45-50 minutes, or until tender inside and crispy on the edges. Brush with more butter halfway through for extra flavor and crispiness.
  6. Once done, remove from the oven, garnish with additional parsley if desired, and serve hot.

Notes

For a cheesy twist, sprinkle grated cheese such as cheddar, Parmesan, or mozzarella between the layers before baking.

Add extra heat by incorporating cayenne pepper or red pepper flakes into the butter mixture.

Swap parsley for thyme, rosemary, or chives for different herb flavors.
