Ingredients

1 2/3 cups (400 g) nonfat vanilla Greek yogurt

4 large eggs

4 tbsp (32 g) cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line an 8-inch round cake pan with parchment paper.
  2. In a large mixing bowl, whisk the Greek yogurt, eggs, and cornstarch together until smooth and well combined.
  3. Pour the mixture into the prepared cake pan and smooth the top with a spatula.
  4. Bake for 30-35 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
  5. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  6. Slice and serve as is, or garnish with your favorite toppings, such as fresh fruit, whipped cream, or a drizzle of honey.

Notes

If you prefer a sweeter cake, consider adding a sugar substitute like stevia or monk fruit, or a touch of honey or maple syrup.

Enhance the flavor with vanilla extract, lemon zest, or a pinch of cinnamon.

Top with fresh fruit, whipped cream, or a dusting of powdered sugar for extra flavor and texture.
