10-Minute Chilli Garlic Noodles

Fiery, garlicky noodles tossed in a bold chilli garlic sauce, ready in just 10 minutes for the ultimate quick comfort meal.

Ingredients

150 g (5 oz) dried wheat noodles or 300 g fresh noodles

½ cup coriander, finely chopped

2 spring onions, finely chopped

1 tbsp homemade crispy chilli oil (optional)

1 tbsp chilli powder or flakes (adjust to taste)

4 cloves garlic, minced

½ tbsp white sugar

3 tbsp neutral oil (sunflower, grapeseed, or canola)

1½ tbsp soy sauce

½ tbsp black vinegar

½ tsp sesame oil

Instructions

  1. Boil noodles according to package instructions until just tender. Drain, reserving a splash of cooking water.
  2. In a large heatproof bowl, add garlic, chilli powder, and sugar.
  3. Heat neutral oil in a small pan until hot but not smoking, then carefully pour over the garlic-chilli mixture to release aroma.
  4. Stir in soy sauce, black vinegar, and sesame oil.
  5. Add cooked noodles and toss until evenly coated, loosening with reserved cooking water if needed.
  6. Mix in coriander, spring onions, and crispy chilli oil (if using).
  7. Serve immediately while hot.

Notes

Reduce chilli powder for a milder dish or use a mild chilli variety.

Wheat noodles are traditional, but rice noodles, udon, or spaghetti also work.

Store-bought chilli oil is a fine substitute for homemade.

Black vinegar can be replaced with rice vinegar or apple cider vinegar for a different flavor profile.

Add vegetables or protein for a heartier meal.
